Spring Riesling

Mac Forbes Spring Riesling is grown high on the western face of the Strathbogie Ranges, where the soils are decomposed granite strewn with pink quartz.
The vineyard is significantly cooler than the Yarra Valley floor; combined with the granite soils, the site produces uniquely intense and textured Riesling fruit.
The fruit is destemmed and crushed into the press. It rests here for a short period, developing just enough tannin, then the juice is slowly pressed for up to 12 hours. Fermentation takes place with indigenous yeasts.
The wine matures on gross lees in a combination of large format seasoned oak and stainless steel or concrete tanks. At bottling it is filtered but not fined.
Pale gold, Mac Forbes Spring Riesling has an electric fruit profile with a phenolic backdrop from time on lees and a hint of sweetness. Cellaring potential is seven years.
